Ingredients
- 2 medium beets, peeled and roughly chopped
- 1 inch fresh ginger, peeled and roughly chopped
- 1 cup water or coconut water
- 1 tbsp lemon juice
- 1 tsp honey or maple syrup (optional, for sweetness)
- 0.5 cup ice cubes
Instructions
- 1
Prepare your ingredients by peeling and roughly chopping the beets and fresh ginger. Ensure the beets are tender enough for your juicer or blender to process efficiently.
- 2
If using a juicer, feed the chopped beets and ginger through the juicer, collecting the juice. If using a high-speed blender, add the chopped beets, ginger, water or coconut water, and lemon juice to the blender jar.
- 3
If blending, process on high speed for about 60-90 seconds, or until the mixture is completely smooth and no large chunks remain. You should see a thick, vibrant liquid forming.
- 4
If you blended the ingredients, strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher, pressing to extract as much liquid as possible. Discard the pulp.
- 5
Taste the juice and add honey or maple syrup if you desire more sweetness, stirring until dissolved. Add ice cubes to the pitcher or directly into serving glasses for a chilled beverage.
- 6
Pour the beet and ginger juice into glasses and serve immediately to enjoy its fresh, invigorating flavors and bright color.

Tips & Notes
- Zest the lemon before juicing — it's nearly impossible to zest after the lemon is squeezed.
- Toast desiccated coconut in a dry pan over medium heat for 2–3 minutes, stirring, for a deeper flavor.
- Warm honey (set the jar in hot water for a few minutes) makes it easier to measure and pour.
