A gluten-free Thanksgiving is a planning problem, not a single recipe. The bird, plain vegetables, and cranberry sauce made from fruit and sugar are usually the easy dishes. Wheat shows up in gravy, stuffing bread, pie crust, and a few cans people stop reading. This page is the menu by course, a make-ahead timeline, a cross-contact plan for a mixed kitchen and for guests, the label checks, and leftovers. Ratios live in the linked guides.
The Gluten Free Recipes team wrote this as a planning guide, not as medical advice. Certified gluten-free applies only when that package says so. In the United States, a gluten-free label means less than 20 parts per million, as explained on the FDA gluten and food labeling page. Oats and avenin are a clinician's call, not a table guess.
Menu by course
Turkey or another plain roast. A plain, unseasoned turkey is gluten-free. Label checks for the bird are in Is Turkey Gluten-Free?. Self-basting birds, injected broth, and a pre-stuffed bird are not. If the tag lists broth, modified food starch, or a seasoning packet, read the ingredient list. Season a plain bird yourself, and skip stuffing in the cavity. Onion, herbs, and citrus in the cavity are fine. A classic roast chicken follows the same rule. Do not baste with wheat-brewed soy sauce. Use gluten-free tamari only when that bottle says gluten-free. See Is Soy Sauce Gluten-Free?.
Gravy. Wheat flour is the usual thickener. Use cornstarch, arrowroot, or a labeled gluten-free flour, with the ratios in How to Make Gluten-Free Gravy. Drippings are only as safe as the pan. If someone else roasts a stuffed bird nearby, make a separate pot from broth labeled gluten-free. A spoon that stirred a wheat roux does not go in that pot.
Stuffing or dressing. Dry gluten-free bread, labeled gluten-free broth, and checked sausage are the method in Gluten-Free Stuffing. Bake herbed quinoa stuffing in a dish, not in the bird. USDA stuffing guidance is why dressing is cooked separately and to temperature. Cornbread stuffing starts from classic cornbread made with gluten-free cornmeal and dried. A boxed mix can still list wheat flour.
Potatoes. Garlic mashed potatoes stay gluten-free with plain dairy and no flour-thickened gravy. Roasted sweet potatoes need oil and salt. Sweet potato casserole needs a look at marshmallows, canned topping, and any oat crumble. Ordinary oats are often handled near gluten-containing grains. Rinsing does not fix that. Use oats labeled gluten-free, and take avenin questions to a clinician. See Are Oats Gluten-Free?.
Green vegetables. Green bean casserole hides wheat in condensed soup and fried onions. Read Gluten-Free Green Bean Casserole before you open a can. Plain green beans with salt and garlic skip the sauce. Roasted Brussels sprouts need a sheet pan that did not hold breaded food. More sides are in salads and sides.
Bread and cranberry. Flaky biscuits sit in the roll spot. If the gluten-free blend already lists xanthan gum, do not add a second binder. Keep them covered, away from wheat rolls. Cranberry sauce is cranberries, sugar, and orange peel. A canned sauce still needs the jar in your hand. Cranberry walnut bread is the loaf version, using a plain bag of berries.
Dessert. Use 100 percent pumpkin purée, not pumpkin pie filling. Bake pumpkin pie in a pie crust from a labeled gluten-free blend. A refrigerated or graham-style crust is wheat unless that box says gluten-free. Apple crisp is the second sweet only with oats labeled gluten-free. If someone cannot eat oats, serve the pie or fruit. More sweets are in desserts.
A make-ahead timeline
Do the gluten-free work while the counters are clean.
The week before. Confirm the bird is plain. Buy broth labeled gluten-free for the gravy and the stuffing. On this trip, read sausage, gravy packets, fried onions, stuffing cubes, pie crusts, and canned soups. Dry gluten-free bread cubes. Bake and freeze biscuits or cornbread if the bread is homemade. Write down which spoon belongs to each gluten-free dish.
Two days before. Chill cranberry sauce in a labeled tub. Rest or blind-bake the crust if the method says to. Roast sweet potatoes if they reheat well. Make the green bean sauce only from starch you measured, not from an unread can. Label every tub gluten-free so wheat gravy does not land on the mash.
Day of. Roast the plain turkey or chicken. Make gravy from those drippings only. Reheat sides in clean pans. Slice the pie with a knife that has not cut a wheat crust. Set gluten-free dishes out before wheat rolls. If time slips, drop a sauce before you drop a label check.
Cross-contact in a mixed kitchen
Cook and cover gluten-free dishes first. Give each one its own spoon, ladle, and board. Keep wheat flour off the counter until those dishes are lidded.
Flour dust settles on a cooling pie and an open bowl of mash. A shared whisk carries it. Share the cross-contamination guide and preventing cross-contamination at home with anyone using the kitchen. A toaster, a colander that held wheat pasta, a wooden spoon, and a floury measuring cup stay a problem after the wheat pie is done.
You do not need a second gravy if the gluten-free pot is the only pot. Label it so nobody adds flour to stretch it.
Guests who bring a dish
Ask in writing for an ingredient list and a serving spoon taped to the lid: no wheat, barley, or rye, and no shared spoon.
A guest casserole is not safe because it looks like yours. Condensed soup and fried onions are the usual wheat. A bakery pie can have a fine filling, a wheat crust, and then a shared slicer. Put checked dishes at the start of the line. If a guest cannot check labels, assign cranberry sauce, a salad with oil and a labeled vinegar, or fruit. Do not assign stuffing, gravy, or pie crust. Keep malt vinegar and wheat-brewed soy sauce on the other table.
Label checks before the cart
A gluten-free claim is the FDA standard under 20 ppm. A certification mark counts only when that package shows it.
Broth. The carton has to say gluten-free. Yeast extract and natural flavors are the usual surprise.
Gravy mixes. Most packets are wheat flour plus seasoning. Thicken drippings yourself, or buy a mix with the claim on that box.
Fried onions. The green-bean can is often wheat-battered. Use a labeled bag, or cook onions in oil that has not fried breaded food.
Stuffing cubes. Seasoned cubes are wheat bread unless the bag says gluten-free. Cornbread mix can still contain wheat flour.
Pie crust. Refrigerated and graham-style crusts are wheat unless the box says gluten-free. Check crumb toppings the same way.
Canned soups. Cream of mushroom and other condensed soups often use wheat flour. Each can needs its own claim. Cornstarch or a rice-flour roux skips the can.
Sausage, marshmallows, seasoning blends, and tamari get the same pass. Tamari is not gluten-free unless the bottle says so.
Leftovers that stay gluten-free
Pack gluten-free food in its own containers before wheat stuffing is scraped up. A shared shelf is fine. A shared fork is not.
Friday's sandwich is a turkey club on bread labeled gluten-free. Turkey and kale chili takes shredded roast with the labeled broth, not wheat gravy. Reheat potatoes in a clean pan. Do not loosen them with that gravy. A pie slice cut with the wheat knife is not a serving for someone who must avoid gluten.

Bob's Red Mill 1-to-1 Gluten Free Baking Flour is the blend for a gravy roux or a pie crust written for a one-to-one flour. It does not make a wheat ingredient safe.
King Arthur Measure for Measure Gluten-Free Flour is the other one-to-one blend. If the bag already lists xanthan gum, do not add a second binder.
King Arthur Gluten-Free Bread Flour is for yeast biscuits and rolls, not a swap into the pie crust. Use the flour the recipe names.
San-J gluten-free tamari replaces wheat-brewed soy sauce in a marinade. The bottle still has to say gluten-free.
Bob's Red Mill Gluten Free Oats are for the apple crisp topping only. They are not a promise that every person with celiac disease will tolerate oats. If oats are off the menu for someone you feed, leave the crisp off their plate.

When should the gluten-free dishes be cooked relative to a wheat pie?
Cook and cover the gluten-free dishes first, while the counter is free of wheat flour. Bake a wheat pie after those dishes are lidded or on their own table.
A shared oven is fine if the pans do not touch and you are not sifting wheat flour over an uncovered gluten-free pie.
How do leftovers stay gluten-free on Friday?
Use separate containers and forks before any wheat stuffing goes into the fridge, then reheat in a clean pan.
Turkey sandwiches and turkey chili work the next day when the bread and the broth are labeled gluten-free and wheat-roux gravy stays in another tub.
What should a guest write on a dish they bring?
An ingredient list, the words gluten-free, and a serving spoon that stays with the lid.
Homemade is not a gluten-free claim. Soup, fried onions, stuffing cubes, and pie crust are the lines that matter. Otherwise serve that dish on the other table.
Which canned goods need a gluten-free label before they go in the cart?
Broth, gravy mix, fried onions, stuffing cubes, pie crust, and canned cream soups.
Read a cranberry jar and a can of pumpkin too. Pie filling and 100 percent purée are different products. On food sold in the United States, gluten-free means the FDA claim, under 20 ppm.
Can one gluten-free menu feed the whole table?
Yes. Starch-thickened gravy, gluten-free stuffing, and a gluten-free pie are ordinary food when they are made well.
Skip a second gravy if the gluten-free pot is the only pot, and label it so nobody stirs in flour. Oats still belong in a conversation with a clinician. Everyone else can eat the potatoes and the turkey.
This article is educational and is not medical advice. Holiday formulas change. Verify every packaged ingredient on the day you cook, and confirm personal celiac decisions, including oats and avenin, with a clinician or dietitian. Certified gluten-free applies only when that package says it is certified.
