Ingredients

  • 2 medium apples, cored and roughly chopped
  • 2 medium carrots, peeled and roughly chopped
  • 1 inch fresh ginger, peeled and roughly chopped
  • 0.5 cup water (or more, for desired consistency)
  • 1 tbsp fresh lemon juice (optional, for brightness)
  • 1 tbsp honey or maple syrup (optional, for sweetness)

Instructions

  1. 1

Prepare your ingredients by washing, coring, and roughly chopping the apples, peeling and chopping the carrots, and peeling and chopping the fresh ginger. Ensure all pieces are small enough to fit into your juicer or blender.

  2. 2

Feed the chopped apples, carrots, and ginger through your juicer according to the manufacturer's instructions. If using a blender, add the chopped produce and 0.5 cup of water to the blender pitcher.

  3. 3

If using a blender, process on high speed for about 60-90 seconds, or until the mixture is completely smooth and liquified. Add more water, a tablespoon at a time, if a thinner consistency is desired. If using a juicer, strain the juice through a fine-mesh sieve if you prefer a smoother texture, pressing down on the pulp with a spoon.

  4. 4

Taste the juice and stir in the optional lemon juice for added brightness or honey or maple syrup for extra sweetness, if desired. Continue to stir until any added sweetener is fully dissolved.

  5. 5

Pour the freshly made juice into glasses and serve immediately to enjoy its peak freshness and vibrant flavors.

Tips & Notes

  • Pre-shredded bagged carrots are drier and choppier — they won't give the same moist crumb.
  • Zest the lemon before juicing — it's nearly impossible to zest after the lemon is squeezed.
  • Honey is sweeter than sugar — if substituting, use 3/4 cup honey per 1 cup sugar and reduce liquid by 1/4 cup.
