Cup-for-cup gluten-free flour is not one product. King Arthur Measure for Measure, Bob's Red Mill 1-to-1, Cup4Cup, and Better Batter are all sold as blends that can stand in for wheat flour in many cakes and cookies. They are not the same bag. A bread flour is a different job again. This page is how to choose among those blends without pretending a scoop from one brand will always match a scoop from another.

This is not a ranking of winners. Formulas change. The bag in your cart is the one that counts. A gluten-free claim on food sold in the United States means less than 20 parts per million of gluten, as explained on the FDA gluten and food labeling page. Certified gluten-free applies only when that package shows the certification. We are not your clinician. If you have celiac disease, how strict a flour label needs to be is a decision for you and the clinician or dietitian who knows your history.

The wider map of rice flour, starch, and whole-grain flours is the gluten-free flour guide. Ratios you mix yourself are the flour blend chart. This page stays on the named blends people actually compare in a store.

The meaning of cup for cup

A one-to-one blend is designed so a recipe written for wheat all-purpose flour can take the same volume of blend. That is a convenience, not a law of baking. Rice flour is denser than wheat flour. A cup scooped from the top of the bag weighs more than a cup that was fluffed and leveled, and it weighs a different amount than the next brand. If a recipe gives grams, weigh the flour. If it gives only cups, fluff the bag, spoon the flour in, and level it. Do not plunge the measuring cup into a packed bag.

Most of these blends already include a binder, often xanthan gum. The binder is doing the job gluten would have done to hold the crumb together. If you also add the xanthan or psyllium the recipe lists for a blend that has no binder, the bake can turn slick or gummy. Read the bag. If xanthan is already on the ingredient list, do not add a second binder unless that recipe says the extra amount is for this style of blend.

These blends are not coconut flour, almond flour, or a single starch. Coconut flour drinks much more liquid. Almond flour is a nut meal. Swapping either of them cup for cup into a wheat-style cake is a different recipe. Use them in recipes written for them.

Differences between the bags

Use this as a shopping map, then read the bag you buy. Ingredient panels move. A dairy-free bake can fail on a blend that lists milk powder even when the blend is gluten-free. A yeast loaf can fail on a blend that was built for cookies.

King Arthur Measure for Measure is the cake-and-cookie blend, not the bread flour in the same brand family. People compare it with Bob's Red Mill 1-to-1 because both are sold as cup-for-cup replacements for wheat all-purpose flour. In practice, cookies and muffins are where they are closest. A finicky pastry or a high-rising layer cake can still show a difference in browning and tenderness. If a recipe on this site names one of them, start there. If it says only "gluten-free all-purpose blend," either cup-for-cup bag is a fair start, and you should not add extra xanthan if the bag already has it.

Cup4Cup is also sold as a multipurpose gluten-free flour. Some versions of this blend list milk powder. That does not add gluten. It does matter if the eater avoids dairy. Read the panel of the exact bag. Do not assume a gluten-free blend is dairy-free.

Better Batter is another rice-based all-purpose blend with its own following among people who bake yeast recipes and cakes from the same bag. It is not a license to skip the label. Treat it like the others: gluten-free only when that package says so, and no second binder if the bag already lists one.

King Arthur Gluten-Free Bread Flour is for yeast loaves and rolls that call for bread flour. It is the wrong swap when a cookie recipe calls for Measure for Measure or a 1-to-1. Bread flour is built to hold a higher-rising dough. Using it in a cake because it was the bag on the counter will not match the cookie blend, and using the cookie blend in a lean sandwich loaf will not match a bread flour. Pick the bag for the recipe.

None of these bags makes a wheat flour gluten-free. None of them fixes a bulk-bin scoop that shared a shovel with wheat flour. Buy a sealed bag.

Recipes for each blend

Cookies, cakes, and pie crust are the cup-for-cup jobs:

Yeast doughs are the bread-flour job, or a recipe that was written for the blend it names:

More of both are in baking. Pancake and waffle ratios are in gluten-free pancake tips if the griddle is the project, not the loaf.

Weight, binders, and the second xanthan problem

A kitchen scale removes the biggest difference between these bags. Rice blends vary by how the cup was packed. Grams do not. If you convert a cup recipe, convert each brand by the gram weight printed on that bag when the bag gives a cup weight. Do not reuse the gram weight from a different brand's nutrition panel.

Xanthan gum and psyllium husk are both binders. They are not identical. A recipe that calls for psyllium, especially a bread, wants psyllium. A recipe that calls for xanthan wants xanthan. A blend that already includes xanthan covers the xanthan in a cookie or cake written for a cup-for-cup flour. Adding a full extra teaspoon because an older recipe assumed a binder-free mix is the mistake that makes a cake slick.

Baking powder is a separate ingredient in the same bowl. Some baking powders use wheat starch as a carrier. The flour being gluten-free does not make the tin gluten-free. Read it. The short version is Is Baking Powder Gluten-Free?.

Oat flour is not one of these blends. Certified gluten-free oat flour is a different ingredient, and a minority of people with celiac disease react to avenin even when the oats are labeled gluten-free. That is a clinician's question. Do not "improve" a rice blend by stirring in ordinary oats.

Bulk bins, store bakery scoops, and shared sifters

A sealed bag with a gluten-free claim is the product. A bulk bin of "gluten-free flour" that uses a shared scoop is not the same product, even if the bin card repeats the brand name. Flour dust travels. Sift gluten-free blends in a sifter that is not also used for wheat flour. The cross-contamination guide is the longer kitchen rule.

Store the bag closed. A gluten-free blend on an open shelf under a wheat-flour work zone picks up dust. That is a kitchen problem, not a reason to call the blend unsafe in the abstract.

A buying note for the blends on this page

As an Amazon Associate, we earn from qualifying purchases. Confirm the package is labeled gluten-free before you buy. A familiar brand name on a wheat all-purpose flour is a different product from the gluten-free blend.

King Arthur Measure for Measure is the cup-for-cup blend for cakes, cookies, and muffins. It is not King Arthur Gluten-Free Bread Flour. If the bag already lists xanthan gum, do not add a second binder unless the recipe says to.

Bob's Red Mill 1-to-1 is the other cup-for-cup blend for those same jobs. Read the binder line and the gluten-free claim on the bag you receive. Bob's also sells individual flours and a wheat flour under the same brand family. The 1-to-1 bag is the one this sentence is about.

Cup4Cup is a multipurpose gluten-free flour. Check whether that bag lists milk if the bake needs to be dairy-free. Gluten-free and dairy-free are different claims.

Better Batter is an all-purpose gluten-free blend for recipes written for that style of flour. Read the binder line before you add xanthan.

King Arthur Gluten-Free Bread Flour is for yeast bread, pizza dough, and rolls that call for a bread flour. Do not use it as the default cake flour.

Is King Arthur Measure for Measure the same as bread flour?

No. Measure for Measure is the cup-for-cup blend for cakes, cookies, and quick breads. King Arthur Gluten-Free Bread Flour is a separate product for yeast loaves.

Using the bread flour in a cookie recipe, or the cookie blend in a lean sandwich loaf, will not match the recipe that named the other bag.

Does Bob's Red Mill 1-to-1 already include a binder?

Read the bag you bought. The 1-to-1 baking flour is sold as a cup-for-cup blend, and that style of blend commonly lists xanthan gum.

If xanthan is on the ingredient list, do not add a second binder unless the recipe tells you this blend needs more. Formulas can change, so the panel in your hand wins over a sentence on a website.

Is Cup4Cup dairy-free?

Not automatically. Some Cup4Cup blends list milk powder. That is a dairy ingredient, not a gluten ingredient.

Read the panel if anyone at the table avoids dairy. A gluten-free claim does not mean the bag is free of milk.

Can I add xanthan gum on top of these blends?

Only when the recipe says to add it for a blend that does not already contain a binder. If the bag lists xanthan, a cookie or cake usually does not need a second dose.

Bread recipes that call for psyllium are a separate formula. Do not "translate" psyllium into a random extra spoon of xanthan.

Which blend should I buy first?

Buy the cup-for-cup blend your most common recipes were written for, in a sealed bag that says gluten-free. For cakes and cookies on this site, that is King Arthur Measure for Measure or Bob's Red Mill 1-to-1.

Add a gluten-free bread flour only when you are baking yeast loaves that call for it. Keep wheat all-purpose flour out of the same scoop.
