In a small bowl, combine the softened butter (or dairy-free alternative), minced garlic, chopped parsley, chopped chives, lemon zest, salt, and black pepper. Mix these ingredients together until they form a cohesive paste, ensuring the garlic and herbs are evenly distributed.

Arrange the scrubbed oysters on the preheated grill, flat-side up. Grill them for about 5-7 minutes, or until the shells begin to pop open slightly, indicating they are warming through. Discard any oysters that do not open after grilling.
