Ingredients

  • 2 cups grated green plantains (green bananas)
  • 1 cup grated yautia (malanga)
  • 0.5 cup ground meat (beef or pork), cooked and seasoned
  • 2 tbsp sofrito (GF)
  • 1 tbsp achiote oil (annatto oil)
  • 1 tsp adobo seasoning (GF)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • Vegetable oil for frying enough for 2-3 inches depth

Instructions

  1. 1

In a large bowl, combine the grated green plantains and grated yautia. Mix them thoroughly until they form a cohesive masa. This mixture will be the outer shell of your alcapurrias.

  2. 2

In a separate small bowl, combine the cooked ground meat with the gluten-free sofrito, achiote oil, gluten-free adobo seasoning, salt, and black pepper. Stir everything together until well incorporated, creating a flavorful filling.

  3. 3

Take about 1/4 cup of the plantain and yautia masa and flatten it in your palm to form a disc. Place about 1-2 tablespoons of the meat filling in the center of the disc. Carefully fold the masa around the filling, shaping it into an oval or torpedo-like form, ensuring the filling is completely enclosed.

  4. 4

Heat about 2-3 inches of vegetable oil in a deep pot or Dutch oven over medium-high heat until it reaches approximately 350°F (175°C). Carefully slide the shaped alcapurrias into the hot oil, being careful not to overcrowd the pot. Fry them in batches for about 8-10 minutes, turning occasionally, until they are golden brown and crispy on all sides.

  5. 5

Using a slotted spoon, remove the alcapurrias from the hot oil and place them on a wire rack set over a baking sheet to drain any excess oil. Allow them to cool slightly for a few minutes before serving hot. These are best enjoyed fresh from the fryer.

Tips & Notes

  • Freeze overripe bananas in their peel; thaw on the counter and squeeze out the pulp for perfectly soft mash.
  • Pat beef dry with paper towels before browning — surface moisture causes steaming instead of searing.
  • Label GF dishes clearly at parties so guests with dietary restrictions can eat confidently.
