Making Gluten-Free Cakes That Impress
Gluten-free cakes have a reputation for being dry, dense, or crumbly. But with the right flour blend, proper technique, and a few key adjustments, GF cakes can be just as moist, tender, and delicious as conventional ones — sometimes indistinguishable.
Choosing the Right Flour for GF Cakes
The flour blend matters enormously for cake texture:
For layer cakes and cupcakes: King Arthur Measure for Measure or Bob's Red Mill 1-to-1 both perform well in 1:1 replacement of all-purpose flour. They produce tender, fine-crumbed cakes.
For dense, moist cakes (like chocolate fudge cake, carrot cake): Almond flour (alone or 50/50 with a GF all-purpose blend) produces exceptionally moist, rich results. Many bakers prefer these to their wheat equivalents.
For delicate cakes (like genoise or white cake): Super-fine rice flour blended with cornstarch (3:1 ratio) creates a delicate crumb closer to cake flour.
Avoid: Heavy, coarsely ground GF flours like basic brown rice flour or most single-grain flours — these produce gritty, dense cakes.
Key Adjustments for GF Cakes
Add Moisture
GF flours don't retain moisture as well as wheat flour. Compensate by:
- Adding 2-3 tablespoons extra liquid (milk, buttermilk, fruit juice)
- Substituting sour cream, Greek yogurt, or buttermilk for regular milk (adds fat and acid)
- Using oil rather than butter in some recipes (oil keeps cakes moister at room temperature)
Extra Eggs or Egg Yolks
For added richness and structure without heaviness, add an extra egg yolk (not the whole egg) to most GF cake recipes. Egg yolks add emulsifying lecithin and richness without adding too much structure-building protein.
More Leavening
GF batters often need a slight increase in baking powder — add 25% more than the recipe calls for. This helps compensate for the reduced gas retention of GF flour networks.
Baking Soda + Acid
Include a small amount of baking soda in addition to baking powder, combined with an acidic ingredient (buttermilk, yogurt, or a teaspoon of lemon juice). The reaction between baking soda and acid produces CO₂ immediately, creating additional lift.
The Creaming Method Still Works
For butter-based cakes, the creaming method (beating butter and sugar until light and fluffy) still works well with GF flour. The air incorporated during creaming contributes meaningfully to a lighter texture.
Technique Tips for Fluffy GF Cakes
Room Temperature Ingredients
Bring butter, eggs, milk, and other dairy to room temperature before mixing. Cold ingredients don't emulsify properly, creating a curdled-looking batter that produces a denser cake.
The Reverse Creaming Method
For particularly tender, fine-crumbed GF cakes, use the reverse creaming method:
- Mix GF flour with sugar first
- Add soft butter and mix until it looks like wet sand
- Add eggs one at a time
- Add liquid last
- Non-stick spray plus a round of parchment on the bottom
- OR butter + flour (use GF flour or cocoa powder for chocolate cakes)
- For extra insurance: grease + parchment + grease again
- Bake GF cakes at the recommended temperature or 25°F / 15°C lower to prevent over-browning before the center is cooked through
- Start checking 5 minutes before the recipe states
- Use a toothpick test AND touch the top — it should spring back slightly when gently pressed
- Internal temperature 205-210°F / 96-99°C ensures fully cooked interior
This coats starch granules with fat before they're exposed to liquid, reducing starch gelatinization and creating a more tender crumb.
Don't Over-Mix
Unlike bread where mixing develops desirable structure, cake batter should be mixed until just combined after the flour is added. Over-mixing toughens GF cakes by over-activating the starches.
Rest the Batter
Let cake batter rest for 10-15 minutes after mixing. This allows the GF flour to fully hydrate, reducing grittiness and improving texture.

Solving Common GF Cake Problems
Dry texture: Not enough fat or liquid. Add extra egg yolk, substitute sour cream for milk, or add 2 tablespoons more oil.
Dense, heavy cake: Too much xanthan gum, not enough leavening, or incorrect baking temperature.
Gritty texture: Flour wasn't fine enough, or batter wasn't rested. Use super-fine rice flour and let batter rest.
Sinking in the middle: Oven too hot, too much leavening, or opened the oven too early. GF cakes are more sensitive to temperature fluctuations during baking.
Crumbling: Not enough binder (xanthan gum), not enough eggs, or cutting while warm.
Sticks to pan: Pan not prepared properly. Use parchment liner plus grease.
