Conventional beer is made from malted barley — a major source of gluten — and is absolutely off-limits for people with celiac disease or gluten sensitivity. But the craft GF beer market has expanded significantly, offering genuinely good options for beer lovers who need to avoid gluten.

Understanding the difference between truly GF beer and "gluten-removed" beer is critical for celiac safety.

Why Conventional Beer Contains Gluten

Traditional beer is brewed from malted barley (sometimes wheat), water, hops, and yeast. Malted barley provides the fermentable sugars for alcohol production. Since barley is a gluten-containing grain, all conventional beers contain significant amounts of gluten — typically 2,000-20,000 ppm. For context, the GF safety threshold is 20 ppm.

Types of GF Beer

1. Naturally Gluten-Free Beer

Made entirely from GF grains — no wheat or barley at any stage of production. These are the safest option for people with celiac disease.

Common GF base ingredients:

  • Sorghum: The most common GF grain used in GF beer. Produces a light, slightly sweet, sometimes cidery flavor.
  • Millet: Used by several craft GF breweries. Produces a clean, light flavor.
  • Rice: Often used in combination with other GF grains. Creates a very light, clean beer.
  • Buckwheat: Used by some craft breweries for darker, more complex styles.
  • Quinoa: Appears in some specialty GF beers.
  • Corn: Used in some GF lagers.
  • Chestnuts: Used in some specialty Italian and French GF beers.

2. Gluten-Removed Beer

Made from barley (and sometimes wheat), but treated with an enzyme called Clarex (or similar) that cleaves gluten proteins into smaller fragments. The resulting beer tests below 20 ppm on ELISA testing — the standard gluten testing method.

The celiac controversy: This category is controversial and problematic for celiac disease:

  • The ELISA testing method may not detect all fragmented gluten, leading to inaccurately low readings
  • The immune response in celiac disease responds to specific gluten peptide fragments, some of which may survive enzyme treatment
  • Studies have found that some celiac patients react to gluten-removed beers even when ELISA testing shows <20 ppm
  • The FDA does not allow gluten-removed beers to be labeled "gluten-free" in the US (they must be labeled "crafted to remove gluten")
  • Most celiac disease organizations advise against gluten-removed beer for people with celiac disease

Who might tolerate gluten-removed beer: People with non-celiac gluten sensitivity may tolerate gluten-removed beer, particularly those who are less sensitive. For celiac disease, the safest recommendation is to avoid these products.
